  • You may grind the almonds to flour or chop them in bigger, crunchy particles for texture and more distinguished aroma
  • Slightly reduce the lemon juice quantity the first time, just to feel how the sour touch corresponds to your taste
  • Put the ready dough for 30 minutes in the fridge. Thus, shaping of the cookies would be easier

Take out the butter to adjust to the room temperature. It should be soft but not melted for the recipe. Sift the flour. Chop the almonds. Squeeze the lemon juice.

In bowl, beat the soft butter with the sugar for 3-4 minutes. In another container, mix well the chopped almonds with the sifted flour, the baking powder and the vanilla.

Add the dry ingredients to the butter-sugar mixture and beat with the mixer for another 5 minutes. Pour the lemon juice in and shape the dough by hands until homogeneous and soft.

Take baking pan and place parchment paper on. Use your hands to form equally-sized balls and arrange them on the parchment paper by leaving 4-5 cm distance in between.

Bake in preheat oven at 180 C for 10-12 minutes or until edges get slightly brown. Take out and let them cool. Store at somewhere dry and enjoy.
