  • Always take out cream from refrigerator just before beating
  • You can use fresh blueberries, cranberries or raspberries
  • You may decorate with pistachio as well

Grate the quinces. Turn the hot stove on high heat, take deep saucepan and add the butter. When melted, reduce the heat, add sugar and the grated quinces. Cook for 5 minutes as stirring from time to time. Transfer to blender and puree to smooth consistence. Leave aside to cool down.

Take out the cream from refrigerator and beat until soft peaks. Divide in two. Mix half of it with the cold quinces puree and the other half with blueberry jam.

Arrange both layers in glass, start with 2-3 table spoons of quinces mousse, followed by 2-3 table spoons of blueberry mousse. Repeat layers once again. Decorate with blueberry jam and brown sugar.
