5 g Cocoa
0.5 tsp Vanilla
0.5 tsp Baking powder

50 g Cherries Fresh

When wonderful ingredients are at hand, it is only up to imagination to create beauty. Happy to present to you our version of cocoa sponge, flavorful ganache, thick mascarpone and sour cherries. A blend to dream about. Soo Tasty with Soo Foodies!

  • You may prepare double portion of the cake and assemble it when needed
  • Use dark or semi-dark chocolate chips as per your preferences of sweetness
  • In addition, you can replace mascarpone with some whipped cream




Take an electric mixer to beat the eggs with the sugar. Continue until homogeneous. Mix well with the yogurt and the sunflower oil.


Sift and add the flour carefully into the mixing bowl, then add the cocoa powder, the vanilla and the baking powder. Stir well with spatula until smooth mixture.

Cover with parchment paper the bottom of medium baking pan. Pour the batter in and put in preheat oven at 200 C for 35 minutes. Nearly at the end of the time, insert toothpick into its center and if it comes out clean and dry, the cake is ready.

Remove from the oven and leave aside to cool down.


Chocolate Ganache:

Heat the heavy cream just until boiling point and mix it with the chocolate chips. Stir slowly with spatula and let the chocolate melt and blend with the cream into one smooth mixture. Set aside to cool down a bit.
Remove cherries pits and cut them in halves.



Take serving plate and spread one table spoon full of chocolate ganache as base. Lay one piece of cake. Put one scoop of mascarpone and some cherries over. Place another piece of cake covered with ganache and decorate with cherries again. Enjoy the fabulous tower.
