- 80 g Sugar
- 100 ml Heavy cream
- 200 g Raspberries

- Make sure the bowl for the egg whites is absolutely dry before the start
- Add the top layer of raspberries after the mousse has spent several hours in the fridge. The raspberries will sink down otherwise
- You may replace raspberries with any fruits at hand or of your taste
- You can flavor in addition with vanilla or even cognac
In another bowl, beat the heavy cream alone. Add the melted chocolate in several portions and stir to incorporate it. Add the whisked egg whites at the end again in several portions. Stir very slowly with spatula in one direction only to preserve the air and fluffiness of the mixture.
Put the mousse in the fridge for one hour.
