Chocolate mousse with raspberries

  • Vegetarian

Simple and delightful chocolate dream

  • 30 min
  • Serves 3
  • Medium

Few ingredients and several easy steps on the way to the chocolate heaven. Fluffy, creamy, cocoa-rich mousse and fresh flavor of flamboyant raspberries. Indulge into this irresistible temptation. Soo Tasty with Soo Foodies!

  • Make sure the bowl for the egg whites is absolutely dry before the start
  • Add the top layer of raspberries after the mousse has spent several hours in the fridge. The raspberries will sink down otherwise
  • You may replace raspberries with any fruits at hand or of your taste
  • You can flavor in addition with vanilla or even cognac

Melt the chocolate chips in small saucepan via bain-marie method and then put aside to cool down.

In dry bowl whisk the egg whites with the sugar until stiff peaks are formed.

In another bowl, beat the heavy cream alone. Add the melted chocolate in several portions and stir to incorporate it. Add the whisked egg whites at the end again in several portions. Stir very slowly with spatula in one direction only to preserve the air and fluffiness of the mixture.

Put the mousse in the fridge for one hour.

Take 3 glasses and start with a layer of chocolate mousse, followed by some fresh raspberries and chocolate mousse again. Refrigerate again for couple of hours to tighten. Decorate with fresh raspberries and mint on top.
