2 tbs extra virgin Olive oil
1 tbs Vinegar
3 cloves Garlic
A pinch of Salt
100 g sheep Sirene

Baked eggplant is such a wonderful meal – light, healthy and so pleasantly filling. Fresh and aroma dressing with parsley and garlic. Finish with sheep sirene to turn this plate into a must-try meal. Soo Tasty with Soo Foodies!

  • You may serve the dish cold as well
  • You can use another type of white brine sirene



Bake the eggplant. Chop parsley and garlic. Add olive oil, vinegar, salt and stir well until dressing is well blended. Peel the eggplant, put in plate and slice into strips. Several more cuts with the knife in will help dressing to soak really well. Sprinkle with sheep sirene as a final.
