250 g Sirene
50 g Butter
50 ml Sunflower oil

Eggs and sirene rolls

In small bowl whisk 2 of the eggs. In medium one, combine the yogurt with a pinch of sugar. Add the 2 eggs in and whisk to homogeneous texture.


Take larger bowl and put the flour in. Pour the egg-yogurt mixture in and start kneading with hands until an elastic and soft dough is formed. Transfer it on flat service and knead again. Sprinkle some flour over the surface to ease kneading.


In separate bowl, prepare the filling by whisking the remaining 2 eggs and the crumbled sirene. Mix them well and leave aside.

Proceed with the dough again by cutting it into 2 equal parts. Knead the first one some more and then roll it over the surface to layer 0.25 cm thick. Set aside to rest (on baking pan, foil or just in towel) and start rolling the second half of the dough in the same way.


Spread the butter over the ready rolled sheet, then place the first roll (the one that has been resting for a while) on the top of the second one. Grease again. Cut the dough into equal rectangular pieces and put one table spoon full of filling in each corner. Roll.


Heat the sunflower oil in deep saucepan and put the rolls in. Fry each side to golden brown. Transfer on kitchen paper to absorb the extra fat and serve warm. Enjoy with ayran or tea.
