Hot potatoes with leeks
Potatoes got involved with some really nice company
350 g Leeks
60 g Butter
1 tsp Honey
1 tsp Lemon peel
2 tbs Parsley
A pinch of Salt

- You may use some additional spices as black pepper, thyme, fresh dill
- If you use mature potatoes, certainly peel them first
- Serve with fresh salad or meat, for example
Wash the potatoes very carefully. Do not peel as fresh potatoes share this soft and fibre-rich sweet peel.
Take medium saucepan and put the potatoes in. Add water to cover them completely and a pinch of salt. Put on the hot plate, bring to boil and then reduce heat to simmer about 30 minutes.
Meanwhile, wash, clean and slice the leeks in circles, about 1 cm thick. In another saucepan, add the butter, let it melt and put the leeks in. Stir from time to time and stew until golden color. Watch out not to burn the leeks. Finally, add the boiled potatoes in.
Withdraw from the hot plate and flavor with the lemon peel, the honey and the salt. Add the parsley as well. Stir well to mingle all flavors and textures. Return to the hot plate for 5 minutes more. Serve hot.
