- 1 kg Carrots
- 4 tbs Olive oil
- 3 cloves Garlic
- 0.5 liter Water
- 150 g Olives
- 50 g CorianderFresh
- 100 g red Onions
- 1 tsp Cumin
- 1 tsp CorianderDry
- 2 tbs Lemon juice

- In small saucepan, toast for 1-2 minutes dry cumin and coriander, to release fragrance

Cut all vegetables into small pieces, leave only carrots slices bigger, about 2-3 cm. Slice olives. Take medium saucepan and put olive oil in. Add chopped garlic and sliced carrots. Cover with water and stew until water evaporates. Carrots should not be too soft, keep them a bit crispy. Transfer to big bowl.
