- 400 g Green PeasFreezed
- 0.5 liter hot Water
- 50 ml Olive oil
- from 1 lemon Lemon juice
- Black pepper
- 200 g Radishes
- 50 g spring Onions
- 20 g Spearmint
- 100 g Rucola
- 150 g sheep Sirene

- You may also use fresh peas. If so, boil separately and drain
- For more intense flavor, increase the lemon juice or add balsamic vinegar
- Use any type of sirene (cheese) you like, for example pecorino or parmesan
In big bowl combine the dressing ingredients – the olive oil, the fresh lemon juice, salt and black pepper. Mix and start adding the vegetables – the peas, the radishes, the spring onions, the spearmint and the rucola. Stir all well to distribute the dressing flavor.
Plate the salad as individual portion with some sirene cubes on top.
