Watermelon salad – easy, fresh, light and healthy. Full of colors and vitamins and perfect for the hot days. Taste the soft and crunchy texture, with this sweet savory flavors. Soo Tasty with Soo Foodies!

  • The quality of the watermelon is crucial for the salad result
  • You may use any type of sirene (cheese) you like, but we recommend the sheep one
  • Add some lemon zest for extra flavor, for example
  • You can substitute the olive pastе with some chopped olives
  • You may add some basil and skip the spearmint

Peel and chop the onions. Squeeze the lemon. In small bowl mix the onions with half of the lemon juice.

Clean the watermelon from its seeds. Cut in small pieces. Cube the sirene.

Slice the parsley and the spearmint. In another bowl mix the greens with the other half of the lemon juice and the olive oil. Stir well.

Take serving plate and put the watermelon first. Scatter above the cubes of sirene. Add the green dressing and the lemon onions. Flavor with some freshly ground black pepper. Decorate with olive paste (optionally).
